This has become a fun family favorite, devised as a quick breakfast for a family vacation to Lake of the Ozarks. We were going to miss a few weeks at the farmer’s market so had a bunch of eggs to play with.

Ingredients

  • A slice of bread of your choice
  • 1 duck egg
  • cheddar cheese for sprinkling
  • salt & pepper to taste
  • butter for the bread and for the frying pan

The first thing to do is use a small amount of butter to butter both sides of the bread, I then cut out a hole with either a round cookie cutter or a knife. Next is to break the egg into a bowl. I do this because duck egg shells are a bit tougher to break than a chickens and it seems I have to be vigilant for bits of egg shell. While the bread is being prepared, warm up your pan or skillet and add just enough butter to keep things from sticking. Then put the bread in the pan to start toasting, at this point it is time to add the egg to the hole in the bread. You can add salt and pepper to taste if you like, then sprinkle cheddar cheese around the egg. Looking something like this.

As you can see I also add the insert to the pan to toast. Cooking the egg to medium allows the white to fully cook but leaves the yolk for dipping with the extra “toasty” bit. The finished product is enjoyable and a quick go to for a fun weekend with friends or family, or quick enough to make before the rigors of a weekday.
